Homemade carrot apple juice

In the video titled “Rapid Weight Loss Part 2! 10 Days Diet Plan”, Yoon Eun-hye demonstrated her diet plan starting with her morning routine.

Every morning after waking up, and on an empty stomach, she takes probiotics in a powdered form and drinks tons of water. Then, she moves on to making her carrot and apple juice.

She starts with one regular carrot, leaving the skin on, scrubs it clean and chops them up into smaller pieces before boiling them in a pot of water.

Next, she chops up an apple and throws it into the blender together with the boiled carrots and 500ml of water.

Without adding any sugar at all, your blended juice will still taste sweet and should be drunk 10 to 15 minutes before your breakfast.

This will help with thinning your stomach and is also when the absorption of vitamins and nutrients from the juice is the most effective (yes, there’s a right time to drink juice!).

However, do stray away from consuming citrus juices in the mornings on an empty stomach as it may have adverse effects or damage your stomach.

Fried cauliflower rice

Switching out white rice with cauliflower rice may be the top tip for maintaining a healthy weight. To make Yoon Eun-hye’s breakfast meal, you’ll need 100g of chopped cabbage, 50g of enoki mushroom, 50g of cauliflower rice, 10g of low-calorie spicy sauce, and 10g of siracha sauce (if you like it extra spicy).

Chop and dice up both the cabbage and enoki mushrooms till it’s about the same size as the cauliflower rice.

Bonus tip: Use an extra virgin olive oil spray instead of the usual. This will ensure less oil is utilised and you’ll also be consuming less oil!

After spraying your pan with oil, add all your dry ingredients and start frying! Here, Yoon Eun-hye adds a little Cheongyang chilli pepper for extra flavour. Then, add the spicy sauce and continue mixing and frying.

Push the fried cauliflower rice to one side of the pan, spray a little more oil on the empty side, and fry an egg. Add some pepper to the egg to season it.

When the fried cauliflower rice has browned up a little and is “scorched”, and your egg is done, it’s ready to serve your delicious meal!

Not only does cauliflower rice taste like “real rice”, but it’s also lower in calories and carbohydrates, is a great source of fibre, and is higher in vitamins B, C, and K1. With a lower calorie intake, it’ll be easier to control your weight.

Gimbap, a popular and easy-to-make Korean dish, is loved by many in Asia and can be found in almost every nook and cranny in Korea.

It’s usually made with cooked rice, fish, meat, and vegetables rolled in gim (dried sheets of seaweed), with lots of sesame oil and served in bite-sized slices.

Yoon Eun-hye’s keto version includes two chicken breast sausages, two eggs, 120g of cabbage, marinated tuna, two slices of cheese, perilla leaves, sliced red and yellow peppers, sliced cucumber, salad mix or lettuce, and 30g of siracha sauce and vegan mayonnaise each.

She usually makes two rolls of keto Gimbap, one with marinated tuna and the other with chicken sausages. This dish might seem small but it’s filled with lots of fresh, nutritional ingredients and has a rich flavour too.

Plus, all the vegetables present will help to fill your tummy up! Other than adding some crunch and texture, it contains fibre and water, and are high volume, low-calorie foods.

Loosely translated to “mixed rice with meat and assorted vegetables”, Bibimbap is yet another incredibly popular dish in Korea that is also enjoyed by Malaysians.

It’s a daily staple that many Koreans eat daily and is usually served as a warm bowl of white rice stirred together with egg, sliced meat, vegetables, namul (Korean spinach), and gochujang (red chilli paste).

Yoon Eun-hye usually prepares her avocado Bibimbap in the morning for breakfast. Instead of white rice, she uses konjac rice which has a high fibre content and many health benefits.

With its low calorie and carbohydrate content, konjac rice is an ideal option for those who are trying to reduce carbohydrate intake for weight loss or health reasons. And it can also regulate bowel movements, lower cholesterol and blood glucose levels, and help prevent diverticular disease.

Other healthy ingredients include avocado, baked tofu, vegetable mix, and shiitake mushrooms. Avocadoes, especially, are known as a healthy fat source that can help you feel fuller between meals and has multiple beneficial vitamins too.

Tofu fried rice

Last but not least, another tasty and healthy meal, amongst many conjured up by Yoon Eun-hye, is simple tofu fried rice.

We usually have tofu as a side dish in Thai and Chinese cuisine, but it can also be a great main ingredient for a flavourful meal.

There are studies showing that soy food has compounds to protect against illnesses like diabetes, heart disease, and even some types of cancer.

Tofu also contains all the vital amino acids your body requires, is rich in minerals and vitamins, and are primary sources of isoflavones which are associated with a range of health benefits.

Other ingredients added to the fried rice are shredded cabbage, 50g of diced onions, half a portion of konjac rice, half a tofu, and a small amount of chilli sauce and oyster sauce.
